TRINITY UNIVERSITY OF ASIA College of Business Administration CASHEW BREAD A Feasibility Study Presented to the Faculty of College of Business Administration In Partial Fulfilment Of the Requirements for the Degree Bachelor of Science in Accountancy By: GRACIA, Grazielle Pauline F. MARQUEZ, Lister A. CHAPTER 1 INTRODUCTION This chapter includes the different aspects that were considered in making the feasibility study. The proposed location of the business was also shown in this chapter. Background of the study Bread is one of the staple food of man, it is made of flour, liquid, salt, leavening , shortening and other ingredients.

Bread comes in many sizes and shapes, each one with its own name, aroma, flavour and level of quality. Cashew (Anacardium Occidentale) is called Kasoy or Balubad in Tagalog or Bologo in Ilokano. It is originated from the north-eastern Brazil and was brought to the Philippines in the 17th Century. The cashew plant is an evergreen tree that grows up to 12 meters tall, with a dome-shaped crown or canopy bearing the foliage on the outside, where flowers and fruits are found. The fruit has a kidney-shaped nut, about 3 cm x 1. cm attached to a much enlarged and swollen pedicel or receptacle forming the fruit-like cashew apple. Cashew/Kasuy is one of the most important nut crop in the Philippines and the third most important nut in the world after almond and hazelnut. Traditionally, only the nut is given attention by cashew growers as it commands a good demand in the market among domestic consumers. It is a versatile crop with many economic uses in the food industry as food and feed. The cashew nut is a popular snack, and has rich flavour means that it is often eaten on its own, lightly salted or sugared, or covered in chocolate.

Under Food and Non-alcoholic Beverages Division, bread and cereals has the highest expenditure share at 12. 4 percent. The commodities most commonly purchased by households belonging to Bread and Cereals Class are rice, corn, flour, cereal preparations like bibingka, puto, sumang malagkit, pancit canton, biko, bread and other bakery products like loaf, pandesal, biscuit, cracker, monay, and pasta products like macaroni, spaghetti, sotanghon, bihon, miki; this is according to the 2007-2008 Commodity and Outlet Survey. The target market of the proposed study was the residents of the city of Antipolo.

The cityhood marked the beginning of the period of Antipolo’s greatest growth and development. From being just one of the many municipalities of Rizal Province, Antipolo has become one of the fastest growing cities in the country with an annual income and population that rivals the combined income and population of all the other towns in Rizal. When people think of Antipolo City, the first thing that comes to mind was the Our Lady of Voyage, kasuy, suman and kakanin. The researchers aim to create a new product for the people of Antipolo using one of its main delicacies, kasuy.

And since cashew nut was easily found in the market of Antipolo City, the researcher proposed a new presentation of the consumption of cashew nut (Kasuy) in the form of bread. Not only having the regular vitamins and minerals that cashew nut can offer but in addition the benefits that bread provide to maintain a good and healthy body. They want to produce a product that can be both healthy and consumable at the same time. The residents of Antipolo have not yet heard of the product, the CASHEW BREAD, thus making them interested in consuming such.

And since the Cashew Bread is not the typical bread, it does not only contain carbohydrates or fibres it also contains vitamins that can be found in a cashew nut. Cashew nuts have oleic acid that promotes good cardiovascular health that is good to people especially those with diabetic and heart problems. Some basic yeast bread recipes are enhanced with other ingredients that change the characteristics of the bread and some other bread may include ingredients that simply add flavour to the bread but the cashew bread contains both enriching and flavouring ingredients and may be almost a meal in them. Vision Statement

To be Philippines premier bread manufactures, offering healthy and superior tasting food to every household. Mission Statement * Innovative, competitive and dedicated to satisfying our customers and consumers. * To constantly improve what is essential to human progress by enhancing the quality product we sell. * Serve our customers and delight our consumers through the quality of the product. Needs Giving Rise The proponents decided to open the business in Antipolo City because they notice that they have much cheaper permits to operate the business and the Minimum Wage is a lot lower than those of the NCR area.

The researchers are fond of eating both cashew nut and bread; this is the reason why they came up with the idea of incorporating the two ingredients together making a remarkable new product. They thought this kind of product is not yet available to the market and making it will be a great investment. They will be the pioneer in introducing CASHEW BREAD in the market. And they want to present the product to a place known to be one of the main suppliers of cashew nut and one of the fastest growing cities in the Philippines, Antipolo City. The need of bread is growing simultaneous with the population of a city; more people mean more consumption.

And bread and cereal being the highest expenditure share among the commodities being purchased by the household. Bread, having a total of 85 percentile of demand, according to the survey done by the researches in the city. Vicinity Map The proposed location of the factory and office is shown in figure 1. 1 Located along Marcos Highway, Mayamot, Antipolo City. Figure 1. 1 Vicinity Map Scope and Limitation Scope The study of the project took place in the City of Antipolo since the main ingredient, the cashew nut, is one of the city’s staple.

The proposed business will operate in the City of Antipolo, thus the target market will be the people residing therein. The main concern of the study is the production of flavoured-loaf bread, specifically Cashew Bread. Limitations The locals of the City of Antipolo will be prioritized as to the recruitment of the company’s employees. The distribution of the finished product, Cashew Bread, will be exclusively circulated throughout the city. Only people ages 20 and above are being considered as the target market of the researchers. Eggs perform many functions – leavening, binding, thickening, coating or glazing, emulsifying, moisturizing or drying, and adding colour, flavour, and nutrients to the finished product. Eggs also may be used to retard crystallization in some frostings Flour – Bread Flour – flour that typically has higher protein content than all-purpose flour capable of producing breads and rolls of excellent quality.

The flour is usually made with a greater percentage of hard red winter or hard red spring wheat which have higher gluten content giving the bread dough the elastic quality necessary for greater product volume. Protein levels vary from 10. 5%-12. 0%. The flour is usually malted, enriched and can be unbleached or bleached. Common applications include breads, pizza crusts and specialty baked goods. Salt – It contributes to overall flavour. In bread, it controls the fermentation rate of yeast. It has a strengthening effect on the gluten protein in the dough. Without salt, bread rises faster and air pockets enlarge where the gluten has broken, allowing holes to form. Bread made without salt will taste bland.

Sugar – Sugar or sucrose is a carbohydrate occurring naturally in every fruit and vegetable in the plant kingdom. It is the major product of photosynthesis, the process by which plants transform the sun’s energy into food. Sugar for home baking is produced in greatest quantities from sugar cane and sugar beets. Baking soda – A base, alkaline in nature, formed when sodium carbonate (purified form of mineral trona) is mixed with carbon dioxide and water to form sodium bicarbonate. Baking soda is the source of CO2 gas in leavening systems. It neutralizes acids in the batter, adjusting the final pH of baked goods. Baking soda is not the same as baking powder. Production Process

With the present number of production personnel, the business will operate from Mondays through Fridays, from 8:00 a. m. until 5:00 p. m. There will be only one production cycle in a day is to produce ? loaves of Cashew Bread. The process of making the Cashew Bread is shown in Figure 4. 1 Detailed process MIXING Mixing  starts  with sifting flour  with help  of vibratory  sifter . Flour is then collected in bowl and then weighed . All ingredient  are then added in  bowl . Ingerients are  flour , sugar ,fat ,salt ,yeast, gms powder, sodium stearoyl lactilate, smp solution ,bio-bake , Improvers, ammonium chloride , ascorbic acid , cysteine ,pot. Bromate, calcium propionate and acetic acid . These are added in std proportion as per requirement .

After addition of all ingredients bowl is moved to spiral mixer  where is done . Water  is  added  in different quantities . Mixing time depends on  quality of flour in general mixing time can vary from 6- 12 min . under mixing and over mixing can have  direct impact on dough consistency .Dough quality can be checked with stretching the dough . dough temperature is maintained  between 80 degree f – 82 degree f . PROOFING | At this point fermentation is allowed to take its course in a warm and humid atmosphere while the dough is covered. At Beyond Bread we use a cool, dark atmosphere. Similar to that of a cave. Some of our breads proof for as long as 12 hours.

This type of proofing, combined with other details of the bread making process, gives our bread its uniqueness, depth of flavour and crispy crust. Here the dough ferments (or rises) to a desired volume and consistency. Ideally the dough should be soft and slightly pliable. If pushed with a finger it should leave an impression. | BAKING | Final step in the process. During the initial baking there is a tremendous burst of gas that occurs called oven spring. To allow for controlled tearing the bakers score (make cuts to) the loaves. The cuts create a weak area for the expansion to occur. We also use scoring to help identify certain loaves, which may appear similar.

This is where the final result can be experienced. The sight of warm fresh baked bread being pulled from the oven, the smell of freshly baked bread and the sound of the crackling crust is where the results of all the hard work are realized. | CASHEW NUT GRINDING FERMENTATION MIXING OF CASHEW AND BREAD INGREDIENTS FERMENTATION BAKING COOLING SLICING PACKAGING DOUGH MIXING BREAD INGREDIENTS DOUGH MIXING RESTING ADDING OF YEAST DELIVERY CASHEW NUT GRINDING FERMENTATION MIXING OF CASHEW AND BREAD INGREDIENTS FERMENTATION BAKING COOLING SLICING PACKAGING DOUGH MIXING BREAD INGREDIENTS DOUGH MIXING RESTING ADDING OF YEAST DELIVERY Figure 4. 1 Cashew Bread Process Waste disposal

It is very important for the company to keep the factory and the office hygienic at all times since the business manufactures food. To prevent spoilage of bread, certain practices should be strictly followed within the factory. To keep the workplace clean and free from cockroaches and other pests all litters should be properly disposed of after each working day. Inside the factory, several trashcans will be placed of each corner. All recyclable materials will be collected and kept until a junkshop representative comes and collects them. Biodegradable will be collected daily by the city garbage collectors. Plant Layout The plant layout is shown in Figure 4. 1 Figure 4. 1 CHAPTER 5 Financial Aspect
